Lemon Meltaways

I found this great recipe on the foodblog from Zorra and needed to try them. They are really melting aways when you are eating them. Simply wonderful.

for 1 baking tray

80 g soft butter
60 g icing sugar
1 pinch salt
1 / 2 teaspoon vanilla extract
Peel of 1 lemon, finely grated
1 tablespoon lemon juice
130 g flour
10 g cornflour

Add butter, powdered sugar, salt, vanilla extract and lemon zest in a bowl and stir smooth. Add juice and stir until the mass is lighter. Mix flour and cornflour under it, all combine to make a soft dough. Do not knead!

Form a roll of about 2.5 cm Ø, wrap in plastic wrap, place about 30 minutes in the freezer. While the roll is in the freezer, mix 6 tablespoons of icing sugar with some lemon peel. You need this for later to roll them in.

Cut roll with a sharp knife into about 5 mm thick slices.

Put the slices with enough distance to a baking tray with baking sheet and let them cool for about 10 minutes.

Bake: 10-12 minutes in the middle of a preheated oven at 200 degrees. Take care, that they don’t get to dark. Remove them, let cool slightly, then roll in lemon flavored icing sugar and let cool completely on a grid.
