Vanillekipferl

I simply love them. My grandma used to make them and this is the recipe she always used. They melt in your mouth while eating them.

Zutaten:
100g geschälte, geriebene Mandeln
280g Mehl
90g Zucker
1Messerspitze Salz
200g weiche Butter
2 Eigelbe oder 1 Ei

150g Puderzucker + Vanillemark oder Vanillezucker vermengen.

Die Zutaten werden schnell zu einem Teig vermengt und zum
Ruhen über Nacht in den Kühlschrank gelegt.
Dann werden Kipferl geformt und 10-15 Min bei 180Grad gebacken.
Noch warm werden die Kipferl in die Vanille-Puderzuckermischung gelegt.
(Nicht zu dunkel backen sonst werden sie gern trocken und hart!).

In English:
Vanillekipferl
ingredients:
100g peeled, finely ground almonds
280g flour
90g sugar
1 pinch salt
200g soft butter
2 egg yolk or 1 egg

150g icing sugar + the seeds of a vanilla pod or vanilla sugars.

Mix the all ingredients except of the icing sugar to a dough and let it rest over night in the refrigerator. Form the Kipferl and bake for 10-15 min at180°C. Put the Kipferl still warm into the vanilla icing sugar mixture. (don’t bake them too dark otherwise they get dry and hard!).
