Pumpkin Orange Parfait

2 oranges
200 gr pumpkin (Hokkaido)
seeds of 1 vanilla pod
1 pinch cinnamon
2 tablespoons Grand Marnier
2 egg whites
1 pinch salt
50 gr sugar
100 ml whipped cream
100 gr caramels
3-4 tbsp pumpkin seeds
100 gr frozen raspberries
2 tablespoons sugar

Squeeze the juice from the oranges. Cut the pumpkin into cubes. Cook together with the seeds of the vanilla pod, the orange juice and cinnamon for 15 minutes. Puree it and let it cool down.
Beat the egg white with salt until stiff . Stir in sugar. Whip the cream until stiff. Fold the cream, the beaten egg white and the pumpkin puree together. Add the Grand Marnier. Fill in 4-5 molds and give it for 5 hours in the freezer.
Grind toffees in a mixer. Add the pumpkin seeds and chop well. Put on the oven grill. Give the caramel on a baking sheet and place it for approximately 1 / 2 to 1 minutes under the grill. Let it cool and break into pieces.
Boil raspberries with the sugar. Puree it and sieve to remove the seeds. Serve the parfait with raspberry sauce and brittle.

monkfish in limesauce

for 1 person:
180 g monkfish
5 tbsp lime juice
3 tbsp soya sauce
1 red thai chili
2 garlic gloves
1 spring onion

Cut the chili and the garlic in slices. Mix it with the lime juice and the soya sauce. Marinate the monkfish in the sauce for approx. 2 hours.
Take a big piece of aluminium foil and put the fish on it. Add 2-3 tbsp of the sauce. Cut the spring onion in slices. Put it on top of the fish. Make a parcel.
Put it either in the oven at 200°C or on the BBQ for 15-20 Minutes. If you have a steamer, you can also prepare it in there.

Gazpacho

for 3 persons
4 tomatoes blanched peeled cored and pulsed a bit in the blender
1/2 cucumber, finely diced
1 bell yellow and red peppers, finely diced
1/2 red onion, finely chopped
2 small garlic cloves, minced
2 tbsp olive oil
2 tbsp white wine vinegar
1/2 tsp salt
1 slice of toast bread
Cayenne pepper, smoked paprika

Leave some pepper and cucumber over for the decoration. Blend everything very well. Check if some salt or pepper is missing.
Let it cool for several hours. If you like it crunchy make some croutons.

Gazpacho
